E Dinner

Our E dinner doesn't look very exciting.
This is empanadas (which I served with just made peach salsa), egg salad, and edamame.  
I did supplement dinner with corn on the cob (tomorrow is the last day it's being sold, so we have to eat it one more time), and caprese salad (tomato, mozzarella, and basil).
After sort of cheating with our D week dinner, I felt like I needed to do better.
But where are the enchiladas?  Ate them at Grandma Sue's a few days ago.
Eggplant?  Escargot?  Eggs Benedict?  The children wouldn't eat any of it.
Next week with F we can eat anything because it is all food!
