We had what I call our "cuzzie dinner" today. Once a month, we invite the kids' cousins who are here in town to come and join us for dinner. Jace and Salem Brinkerhoff, Zach and Annie Burnett, Brianne Barrus, Ruby Barrus, and a collection of other, non-related YSAs come and eat with us. It's a good time. We've been doing it since school started in the fall and we always have a great time.
For dessert, I suggested we make homemade ice cream sandwiches, but in a baking dish, rather than individually. Izzy liked the idea. I asked what types of cookies and ice cream we should make, and after some discussion, we settled on peanut butter cookies with roasted almond fudge ice cream, and red velvet white chocolate chip cookies with vanilla ice cream.
They turned out okay. The peanut butter chocolate ones were really hard because they had had longer in the freezer, and the red velvet vanilla ones were a bit too soft because they hadn't had enough time in the freezer. No one, however, passed up either variety and we had a nice evening.
